This is a modern take on the Ripasso method. The two previous wines are from this region but can’t be called Valpolicella because of the inclusion of grapes not recognised in the DOCG rules. Ripasso roughly translated means repassed. For a Ripasso, simple Valpolicella is added to a drained barrel of recently fermented Amarone. Once mixed with the old grape skins and spent yeast from the Amarone, a further fermentation takes place. The resulting wine is deeper and fuller flavoured, sometimes described as a baby Amarone. Torre de Falasco also add a small amount of Appassimento grapes to make an even fruitier wine. Gorgeous!
